Ever wondered how to make a street crêpe, Carte style?

Carte is a boutique crêperie specialising in sweet crêpes made with local ingredients. It’s been tough, but we think we’ve created the perfect recipe for our own unique variety of street crêpes.

1. First, find and use only the highest quality ingredients, sourced locally.

2. Make sure all the ingredients you're using are produced with respect for people, animals and the environment. This means considering things like animal welfare standards, sustainability policies, farming and trade practices. 


3. Once you've found high quality, local, ethical suppliers, it's time to make sure all your ingredients taste amazing! (It was hard, but after hours of tasting different varieties of salted caramel, honey, butter, spices, jam, custard, fruit and chocolate, we finally came up with the best tasting combinations. Wait - that wasn’t hard at all.)

4. Now that you've ticked off quality local produce, ethical suppliers, and great tasting ingredients, it's time to master the art of crêpe-making. This is no small feat. For the team at Carte, this involved two short stints overseas: one in Japan, a second stint, more recently, in Paris. There's nowhere better to learn the art of crêpe-making than the home of the street crêpe.

5. Next up, you'll want to find a specialty coffee supplier to really round out the Carte experience. Melbourne is the coffee capital of the world, after all. Like your other suppliers, this coffee supplier should be committed to quality, fair trade practices and environmental sustainability. We use specialty coffee by Allpress Espresso.

6. There's only one thing left to do, and that's to find a team of switched on, happy, motivated young people who are committed to providing outstanding customer service and appreciate the value of good old-fashioned fun.

Carte – it's pronounced cart.

OUR STORY

The idea for Carte was born in a remote skiing village in the Japanese Alps back in 2010. Imagine being stranded on a mountain in a blizzard and not being able to eat anything except crêpes and sushi for a couple of days straight. Well, that’s what happened to two Melbourne University students, Ben Vaughan and Elizabeth Brumby, and it wasn’t as bad as you might think. Upon their return home, the creative juices were flowing, and the pair decided to combine their passion for food, travel and noble causes and start a crêperie of their own: a business that was small but dynamic, combining a new approach to a traditional concept with a strong social and environmental conscience.

 



They set up a cart at a secret, somewhat hidden, location on campus and started selling crêpes to the University community. An instant community fixture, the cart was such a hit in its first year that there would often be queues snaking around campus at any given hour of the day. So, when the pair graduated at the end of 2011, they promptly signed up to build a real shop in the same spot and called their crêperie ‘Carte’, paying homage to its beginnings.

The rest, as they say, is crêpe history.

In everything and anything we do, we want to be leaving the world and its inhabitants better off! That means people, the environment, other businesses, animals, and our community. Here are a few of the things we do to make sure we’re staying true to our values.

PEOPLE

Our team is made up of all kinds of good stuff and great people. We attract and hire switched on, warm, friendly, motivated, young people who ‘get’ what we’re trying to do and love being part of the Carte process.

THE ENVIRONMENT 

All of the packaging used at Carte is biodegradable or recyclable, and wherever we can, we use sustainably harvested materials in the making of furniture and other items. We don't sell bottled water, because Melbourne has some of the best tap water in the world.



Not only that, but we’re committed to sustainably sourcing all of our ingredients. With our high animal welfare standards, Carte is one of only four businesses on campus at the University of Melbourne that is free-range egg accredited. We are proud to use fairly traded coffee by Allpress Espresso, a market leader in ethical and sustainable trade.

OUR COMMUNITY

We love to support, and really be a part of, our community. All of our suppliers – with the exception of Nutella – are local or regional farmers or small business-owners.
